National Pumpkin Seed Day 2024

Appropriate to October, it’s National Pumpkin Seed Day. What usually gets tossed can actually be a delicious and nutritious snack.

Most pumpkin dishes involve scooping out the seeds, cutting off the skin, and chopping up the flesh before cooking. ~Yotam Ottolenghi

As with most hard squash, the center of a pumpkin is a slimy, sticky mass of seeds and tendrils that are typically tossed straight into the trash so one can transform the meat into a tasty paste from which one can make pie, bread or any number of scrumptious treats.

But is that wise? Not necessarily.

The seeds can be salted and baked into a wonderful crunchy treat.

I haven’t been especially hungry lately, so it would be good to have a batch of these on hand in case I do become peckish.

I’d love to tell you that I’ve got some awesome point to make here, but it’s late and I’m a bit burned out.

The knife in this pumpkin’s heart strikes a maelstrom of anxiety. I’m all out of sorts this week.

My ADHD is making it nigh-impossible to concentrate or accomplish anything. I’m a jittery mess and I’m waiting for the storm to subside.

Why?

Who the hell knows? This is not my usual mode. I’m often disorganized and harried, but I’m rarely upset about it.

I typically enjoy the ride, but not this week.

Can’t quite put my finger on it, but I really need to get past it as soon as possible.

Here’s to hoping that’s tomorrow. I probably just need some more Pumpkin 🎃 Spice pudding…
