Springy Orange Cake

Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 small orange rind
  • 2 sticks butter
  • cups sugar
  • juice of the orange
  • 4 eggs
  • 1 cup buttermilk

Instructions

  1. Sift the dry ingredients together

  2. Cream the butter and sugar together

  3. Beat in one egg at a time

  4. Stir in the juice from the orange

  5. Beat the dry ingredients into the mixture, alternating with the buttermilk to keep the batter thick and creamy.

  6. Pour evenly into two 9" round pans

  7. Bake for 30-35 minutes
