This is precisely the time of year for vegetables to be roasted.
We’re still living in the wake of the long, hot growing season and there is a wealth of produce waiting to be turned into dinner.
Now that we are in the cool, resting season, it’s time to defy the chill with a warm oven.
After sunny days and fresh, crisp salad vegetables, veggie trays and healthy snacking, we’re finally ready to be warmed from the inside.
The glistening multicolored chunks of caramelized vegetables emerge from the hot oven on a dark roasting pan.
The colors intensify and darken at the edges while the texture becomes soft and rich.
I can practically taste it and I haven’t even begun cooking.

My goodness, you can practically taste those spectacular, glistening vegetable chunks.
You know they fall into that sweet spot between crisp and chewy.
There’s a satisfying firmness that accompanies the splash of oil or coating of butter that helped to crisp the surface.
Eat your vegetables.

I find it hard to believe, but some people find reading to be as onerous as they do eating their vegetables.
C’mon, man. They’re both good for you and if you consume enough, you might learn to like it.
